For our latest Dig It or Dog It adventure, we decided to tackle a recipe from Betty Crocker’s Fast From Scratch recipe book. Now, I know Betty Crocker is a cultural icon, but the developers of her products seem to be a bit mistaken when it comes to stew. By definition, stew requires a liquid. The recipe we found lacks this essential aspect, so what we ended up with was decidedly not a stew. It was, however, delicious.

- 1 package garden rotini
- Red bell pepper
- Yellow bell pepper
- 1 package Italian sausage
- Basil leaves
Boil the rotini until softened as desired. While it’s boiling, brown the sausage. Slice the bell peppers to your desired size and add them to the sausage. Chop up the basil leaves and add them to the sausage as well. When the peppers are cooked, add this mixture to the rotini. Stir thoroughly and enjoy.
We started out with a specific recipe, but we didn’t really have any intention of following it closely. Originally, it called for tomatoes and Parmesan cheese. Neither of us really likes tomatoes, so we chose to leave them out. You may want to leave them in, however, because they would add another element of taste. We also lacked Parmesan, and I wish we hadn’t. The “stew” would’ve been much better with it. Additionally, the recipe called for penne pasta, but rotini worked just as well.
As for our interpretation, it turned out quite well. We used a sweet Italian turkey sausage, though you could use any kind you wanted. The stew also got better the longer it sat, though the peppers eventually got somewhat soggy. Personally, I’d recommend more herbs and spices, since the rotini noodles were really plain. We eventually added spaghetti sauce, which tasted marvelous.
The Italian Sausage and Pepper Stew was definitely worth trying. If nothing else, we had some fun while we cooked it. Check out the video of us cooking it, then try out your own interpretation.
